Tempering Automation versus Tempering Manually

December 28th, 2009

The legions who love chocolate love it for its rich, creamy smoothness, luster, and snappy bite but they may not know that these attributes aren’t their original qualities but acquired through a process called tempering, which is done in three serial steps: heating, cooling and reheating, while temperatures are maintained at specific levels.

Tempering by hand becomes complicated because of the need to keep temperatures constant at all times, which even experienced chocolatiers sometimes lose track of. There’s a rationale for the need to keep temperatures level:

  • The main reason being that the fats in cocoa butter can solidify into six different crystalline forms during tempering.
  • What crystalline form dominates is dictated by the temperature range at the time of tempering.
  • Of these six crystal types, it’s the type V crystal that plays a key role in imparting the shine and snap to chocolates.
  • The aim of tempering therefore is to produce more of type V crystals by providing an ideal environment, which means maintaining the specific temperature at which these type V crystals form as well as preventing the other types of crystals from forming, dominating and hampering the multiplication of these type V crystals.
  • You can choose either tabliering or seeding to do tempering by hand but should always uphold correct temperatures in both. Otherwise your tempering efforts won’t bear fruit and you’ll find yourself tempering repeatedly.
  • You also shouldn’t allow moisture in your work area and in your equipment as well as utilize an accurate thermometer that you calibrate frequently to ensure that you’re maintaining the correct temperatures always.

Large quantities can be manufactured with a uniform quality every time you prepare confections only if you use a tempering machine. With a chocolate tempering machine, the job of maintaining specific temperatures accurately will be handled by a microprocessor on the machine. Further, chocolates tempered by a machine retain the temper for a far longer time than usual. You’ll save a lot of time; free time can be used for gradually improving the standards of your products and moving forward to a sought-after brand.

Of course, knowing tempering by hand’s an additional advantage because it will be helpful on certain extraordinary situations that may demand it. Investing in a tempering machine would be the ultimate best business move you’ll make not only for the fact that you’ll always be delivering products on time but you’ll be producing the same quality confectioneries every time you make them.

Coffee in the morning. Coffee at the office. Coffee in the afternoon or after dinner. Coffee consumption is a ritual of enormous proportion and that has feed the need for the ever faster and more efficient way to make the coffee. Coffee makers have evolved like everything else in the world of technology. A simple filter over a pot of steamy water is ancient history. The coffee makers we find today do it all and do it better than ever before. How Do You Take Your Coffee? From a Gaggia Coffee Machine? There are so many new kinds of coffees and ways to take it that you almost need an English to Coffee dictionary to interpret for you at the coffee shop. Even more revealing is the fact that many people want to have these exotic mixes and brews in their own homes to enjoy any time of day or night. Home coffee makers don’t just make regular coffee. There are Espresso Maker machine and Cappuccino Makers that make what one could only find at a nice restaurant a decade or two ago. Now these machines at home can grind fresh beans into the perfect recipe and dispense the perfect cup. The Machines Behind the Madness Coffee makers are machines of fine craftsmanship and technological wonders all blended into one. The build-in grinder for example, allows you to have a freshly ground cup that is strong and flavourful without having to grind it at the grocery store or specialty shop. The espresso machine or cappuccino maker can add milk at just the right time and temperature so the art of making it yourself is easy to master. The single cup coffee maker is a growing trend as people are trying to cut down on the caffeine. The single cup maker is also ideal if there is only one coffee drinker in the house or if you usually take your coffee at the office. Let’s Talk Beans Part of what makes a great cup of coffee is the beans. The other part is how well the coffee maker can accurately blend that perfect balance between water and coffee grounds. Most of the world’s coffee is grown in a belt consisting of a latitude around central America and around the globe through Africa and Asia. It is this climate that gives the beans the right conditions and perfect growing season so beans can be naturally brought to ripeness. The next step is the roasting of the beans.

Dessert Parties for Late Night Entertainment

June 3rd, 2008

What’s wrong with this picture?
I used to serve delicious dinners with wonderful desserts (yes, I’ve checked around and, they were wonderful.) However, I knew that there was something missing. After working in Food Service, I learned that the little things, complete the big picture.

It’s not so hard

  • For instance, the use of doilies placed on a dessert plate when serving a fine piece of cake. A nice espresso goes extra well with pastries (use espresso cups and saucers.)

  • You can use wine or champagne glasses to serve desserts a la’ mode. Chill your glasses before your guests arrive, then add some flavorful pound cake and ice cream. Try to have at least two flavors of ice cream to choose from.

Dessert ideas!

  • Serve flavored coffee with some fresh fruit. It can pass as dessert all by itself, if necessary. Don’t forget the Decaf.
  • Keep frozen desserts, around. They are perfect for the unexpected get-together. Most of the fancier desserts can be frozen. Give it about an hour to thaw in warm weather. This works perfectly for a late night dessert party.
  • Keep some butterscotch, chocolate sauce or caramel on hand for cake decoration. Nice thin swirls across the dessert plate work especially well with, Torte or Cheesecake. Mini chocolate chips are always great for Chocolate Cake, coupled with fresh raspberries.

A seasonal dessert that makes a great impression.

  • Begin with a carton of large ripe strawberries. Clean them but leave on the stems. Melt about 2 to 3 large dark chocolate bars, per carton in the microwave, in a pyrex measuring cup. Be very careful not to burn the chocolate. Hold strawberries by the stem, dipping them one by one into the cup. Place them on a large plate with wax paper. Try to dip just over half of the strawberry. Chill for about 45 minutes. Serve with Columbian coffee or even cappuccino if desired.
  • When hosting a dessert party, try not to serve pies. Fruit pies in particular are too informal. They interfere with the mystique of the affair. Always pre-slice your cake, but serve it to guests, one at a time. Do not have the cake already on the plate, unless your dessert is following dinner. Dessert parties are becoming more popular and a little more sophisticated, so use soft lighting and candles.
